My’Super Mash with baked cod and small vegetables

INGREDIENTS:

  • 800gr of My’Super Mash
  • Olive oil
  • 3 onions
  • 3 cloves of garlic
  • 2 red peppers
  • 1 chilli pepper
  • 6 tomatoes
  • Pepper
  • Salt
  • Thyme (a few twigs)
  • 3 bay leaves
  • 1 nice sprig of rosemary
  • 70gr tomato puree
  • 5 tablespoons of honey
  • Sherry Vinegar
  • White wine
  • 800gr of cod

PREPARATION:

  1. Heat the oven to 200°C.
  2. Heat a generous drizzle of olive oil in a baking dish
  3. Peel and chop the onions and simmer in olive oil
  4. Peel and finely chop the garlic and add it to the onions
  5. Remove the seeds from the peppers and cut them into pieces
  6. Simmer with the onions and garlic
  7. Remove the seeds from the pepper, cut it into thin slices and simmer with the remaining vegetables
  8. Remove the tails from the tomatoes, cut them into pieces and add them to the rest of the vegetables in the baking dish
  9. Season with salt and pepper
  10. Add the thyme, bay leaf and rosemary
  11. Add the 70 g of tomato purée and simmer for a while
  12. Add the honey. Deglaze with the cherry vinegar and white wine
  13. Cut the cod into pieces
  14. Season with salt and pepper
  15. Add the cod to the vegetables and place a sheet of aluminium foil on top
  16. Bake in the oven for 15 minutes
  17. Heat the mashed potatoes in the microwave
  18. 800 g of puree and 200 g of water, for 3 to 4 minutes
  19. Serve the mashed potatoes with the cod and vegetables.
  20. Decorate with a little chopped parsley and chives
