Frying the perfect croquette is an art

It can be cold inside, not crispy enough on the outside or can burst open: baking croquettes is an art. Thanks to our smart tips, you'll be able to fry the perfect croquette in two shakes (but without shaking!).

 

  1. Do not thaw the croquettes before use. If necessary, lay them out on paper towels to remove excess ice. The less ice around the croquette, the lesser the chance of splattering.
  2. Preheat the oil in the deep fryer to 175°C.
  3. Fill the fryer basket with one layer of croquettes (do not place the croquettes on top of one another) and deep-fry for 3 to 4 minutes till golden-yellow. Frying too many croquettes at once or shaking the basket during the final frying, increases the risk of the croquette bursting open.
  4. Allow to drain for a while on paper towels... Et voilà: the perfect croquette!
  5. Before frying the next portion, it is important to make sure that the frying oil has again reached a temperature of 175°C.
